Coconut oil is extracted from the meat of the coconut. Unlike most other dietary oils, coconut oil (non-hydrogenated) does not contain trans-fatty acids. The majority of the oil (over 90%) is composed of saturated fatty acids, which includes acids such as CApri, Caprylic and Lauric Acid.
